This seafood Paella dish made my day! I had it at Azul Marino Restaurant in Puerto Banus, Marbella. Fresh from the ocean! so why would I eat something else while in Spain? I'm here to only eat Spanish food :) So let me tell you the story behind Paella..
There is an old story of how the Moorish kings' servants created rice dishes by mixing the left-overs from royal banquets in large pots to take home. It is said by some that that word paella originates from the Arab word “baqiyah” meaning left-overs. The term Paella actually refers to the pan that it is cooked in.
A well known fact about Arabs, is that they don't like to waste food, because they believe that it's a bounty from nature.
There are different types of Paella, easy recipes you can find online. My favorites are seafood Paella with mushroom sauce, but the seafood has to be fresh and good quality. My other favorite is mixed Paella cooked in tomato sauce with peas and carrots. Yum!

A regular mediterranean meal consists of 3 portions: 1/4 carb, 1/4 lean meat & 1/2 veggies, all cooked in healthy fat like olive oil.
We eat fruits after our main meal instead of dessert.
our main meal is lunch, not dinner. this has been the habit for hundreds of years and its good because you'' have a long time to digest the biggest meal of your day before you go to bed.
Dinner is usually light types of foods, just like breakfast. We do a lot of Greek yogurt, white cheese, eggs, olives, tomatoes and cucumbers are a staple items on our table.
Olives are scientifically proven to be one of the healthiest foods, eggs are loaded with protein, super low on calories, and you must have experienced the Greek yogurt craze that hit the USA a few years ago :)
Mediterraneans walk a lot! We walk to school, to work, fro shopping, we walk just for fun.. we live close to each other and we just like to walk all the time. Every evening after dinner, friends call each other and go for a walk. Kids play outside after school until nighttime. The warm weather most of the year helps a lot too.
